From your cupboard
Salt, pepper, oil and butter. Not included in the cost.
Method
- Heat the oven to 200°C. Pat the half duckling dry and salt the skin.
- Sit it skin-side up in a roasting tin. If the pack gives a time, use that.
- If you are roasting it from raw, allow about 50–60 minutes, until the skin is crisp and the juices run clear.
- Cut the carrots into chunks. Toss them and the baby potatoes with a little oil and salt, and roast in a separate tin for about 30–35 minutes, turning once.
- Rest the duckling for 10 minutes.
- Boil or steam the fine beans for 4–5 minutes, then toss with butter and pepper.
- Carve and serve with the potatoes, carrots and beans.
