From your cupboard
Salt, pepper, oil, flour and stock cube. Not included in the cost.
Method
- Take the joint out of the fridge about 20 minutes ahead. Pat the skin dry and rub in salt. Leave any scoring already on the pack.
- Heat the oven to 220°C. Roast until the skin blisters, then turn down to about 180°C and cook through. A joint this size usually wants around 2 hours, but use the pack time if it is printed. The juices should run clear.
- Cut the carrots into chunks. Toss them and the baby potatoes with oil and salt.
- Roast the vegetables for about the last 40 minutes, in the meat tin or separately if it is crowded. Turn once.
- Rest the pork on a board for 15 minutes.
- Spoon most of the fat out of the tin. Stir in a teaspoon of flour, then add water and a stock cube and simmer a few minutes for a thin gravy.
- Carve and serve with the potatoes, carrots and gravy. Leftover pork will do another meal.
