From your cupboard

Long-grain rice, vegetable oil, soy sauce, garlic granules and black pepper. Not included in the cost.

Method

  1. Rinse 200g long-grain rice and cook in a pan of boiling salted water for 10–12 minutes until just tender.
  2. Drain the rice well, spread it out on a large plate and leave it to steam dry for 5 minutes so it fries rather than goes sticky.
  3. Drain the sweetcorn.
  4. Heat 1 tbsp oil in a large frying pan or wok over a high heat. Add the sweetcorn and a pinch of garlic granules and fry for 2 minutes.
  5. Add the rice and stir-fry for 4 minutes, pressing it against the pan so some grains turn lightly golden.
  6. Stir in the tuna and its sauce, breaking up any large flakes. Cook for 3–4 minutes, stirring, until everything is piping hot all the way through.
  7. Taste and add a splash of soy sauce and some black pepper if needed, then serve straight away.
