From your cupboard
Oil, garlic, salt, pepper and dried herbs. Not included in the cost.
Method
- Slice the red onions and cut the aubergines into roughly 2 cm chunks.
- Fry the onion in oil over a medium heat for about 8 minutes until soft.
- Add the aubergine and a pinch of salt and cook until browned and tender, about 10–12 minutes. Stir in a chopped garlic clove for the last minute.
- Boil the gnocchi until they float, then drain. Or fry them in a little oil until patched with gold.
- Tip the gnocchi into the pan with the vegetables.
- Pour in about 150–200 ml of the oat drink, add a pinch of dried herbs, and bubble for 2–3 minutes until it looks like a thin sauce.
- Season with pepper and serve. Keep the rest of the oat carton.
