Carrot and red onion soup with pumpkin seed rolls

A thick, sweet carrot soup made silky with a splash of oat drink and served with crusty pumpkin seed rolls. It's a cheap and filling lunch.

From your cupboard

Vegetable oil, vegetable stock cube, dried thyme, ground cumin, salt and black pepper. Not included in the cost.

Method

  1. Peel and roughly chop 2 red onions. Peel the carrots and slice them into rounds about 1cm thick.
  2. Heat 2 tbsp oil in a large pan over a medium heat. Add the onions and cook for 8 minutes, stirring now and then, until soft.
  3. Stir in 1 tsp ground cumin and 1/2 tsp dried thyme and cook for 1 minute.
  4. Add the carrots, then crumble in 1 stock cube and pour in 1 litre of boiling water. Bring to the boil, cover and simmer for 20–25 minutes until the carrots are very soft when pierced with a knife.
  5. While the soup simmers, warm the rolls in a 180°C oven for 5 minutes.
  6. Take the pan off the heat and blend the soup until smooth, either with a stick blender or carefully in batches in a blender.
  7. Stir in 250ml oat drink and reheat gently for 2 minutes without boiling. Season with salt and pepper and add a little more water if it is too thick.
  8. Serve in bowls with the warm pumpkin seed rolls.
